FITZGERALD, Ga. (WALB) âSharks Express Fish and Chicken got an 84 on its recent food service inspection on Wednesday, Sept. 2.
They got a total of 10 infractions: two were corrected while the inspectors were on site, four had a correct-by date of 9/4/26, one had a correct-by date of 9/8/26, and the remaining three had a correct-by date of 9/7/26.
Below are the infractions that were corrected while inspectors were on-site:
- Violation of Code: [511-6-1.04(4)(k)] Observed 2 scoops in flour and batter containers not properly stored On-Site. Â New Violation.
- Violation of Code:[511-6-1.04(4)(k)]Observed the ice scoop in the ice bin near the drive-thru area not being properly stored. Â Corrected On-Site. New Violation.
WALB spoke with the owner of Sharks Express Fish and Chicken on Thursday, Sept 10, and he stated that all 10 of the infractions have been corrected.

Cleanliness and culinary discipline are paying off for Fredâs Mobile Kitchen after the local food truck and catering business earned a perfect score of 100 on its recent food service inspection.
Owner and head chef Fred Shaw, who graduated from culinary school in 2015, credited the milestone to habits ingrained early in his culinary career.
âIâm always anticipating to try to get 100. We work hard at it,â Shaw said. âI guess when I went to school they taught us about cleaning as you go. So, all the guys on the team know to as they clean, they mess up, just clean up.â
Shaw admits his strict standards have earned him a reputation for being tough in the kitchen, but for him, food safety is personal.
âIf Iâm going to feed my mother, I want everybody to have the same experience she eats,â Shaw said.
Shawâs culinary journey began in restaurants, but the inspiration to strike out on his own came from a fellow Fitzgerald entrepreneur.





âI do have to give props to a local restaurant owner in town. His name is Woody. He started with a blue bus,â Shaw explained. âAnd that bus, when we go out at night and stuff, he was always parked. And I liked that concept. And I said, well, when I finish and go to culinary school, I want to run a food truck. And so, thatâs where that came up from.â
After working his way up to head chef at a local golf course, Shaw realized he had the skills and experience to launch his own venture. Now approaching eight years in business, Fredâs Mobile Kitchen has grown from a local food truck into a full-scale mobile catering operation serving clients across South and Central Georgia, including Macon and Tifton.
âI have a lot of friends and I call them clients, I donât just call them customers,â Shaw said of his community support. âWe have a very, I guess, a unique collaboration with everything in town. They can see the growth over the years and have become a local name.â
While the truck serves standard street fare at festivals and community events, seafood remains the most requested specialty for both truck service and private events. In addition to serving private dinners for local professionals, Fredâs Mobile Kitchen regularly handles large-scale corporate catering. Shaw is currently preparing for his largest single event to dateâa 400-person gathering for a local company.
Looking ahead, Shaw hopes to continue expanding his culinary reach into private dining and private chef services while continuing to serve communities across the state.
