Fairway Tavern in Valdosta is celebrating a perfect 100 on its food service inspection, an achievement owner Chris Milstead says comes down to consistency and attention to detail.
“It is a lot tougher than most people know,” Milstead said. “It’s very minute details that make the difference in hundreds to 96s and down the line.”
Milstead said the restaurant’s concept started with an idea sparked while caddying for his brother, a PGA professional. A conversation about golf simulators turned into a bigger plan — building a restaurant experience around them.
“We are very food focused and the golf simulators are just kind of sets the mood, sets the tone,” Milstead said. “But we are very, very chef-inspired, made-from-scratch kind of food.”
Milstead said Fairway Tavern is designed to be welcoming for a wide range of guests, from children to older adults. The simulators also offer more than just golf.
“The golf simulators are not just golf,” he said. “There’s basketball, there’s football, there’s a little something for everyone on there.”
In the kitchen, chef Bryan Korec credited the perfect score to daily routines and a team-wide mindset focused on both sanitation and food safety — not just cleaning up when an inspection is expected.
“It’s definitely a total team effort,” Korec said. “Not just, ‘Oh, it’s time for a health inspection. Let’s clean up.’ It’s we do that every day.”
Milstead said the restaurant has about 50 employees, and Korec said maintaining standards takes buy-in from everyone — from the kitchen to bartenders and managers.
From the menu to special events, Fairway Tavern also emphasizes variety and creativity. Milstead said he built the menu with shareable appetizers in mind, and the team updates the menu about four times a year.

Korec said the chefs have the flexibility to test new ideas as specials — and even use suggestions from staff members — before adding dishes to seasonal menus. He said upcoming summer additions include a 16-ounce ribeye with sides, a pulled pork mac and cheese skillet, and a barbecue chicken flatbread.
The restaurant also hosts monthly wine pairings and tastings, Milstead said, with themed menus that pair six wines with six foods.
“It’s really fun to just, it’s a breath of fresh air to do something new every month,” he said.
